French Onion soup. Broth, onions, croutons, cheese, oven. A recipe so simple, yet so delicious and so dear to my heart. I remember waking up late, opening the blinds to see a powdery white terrain - it looks like a dreamland. Then, leisurely making my way downstairs to warm up with a blanket and a warm bowl of soup. Nothing makes a perfect snow day like fresh, hot soup. I make this with my mom every snow day. We take out onions and begin to peel them. Then we julienne them and put them into a warm pan with olive oil and butter. Hearing the sizzles and pops of the watery onion meeting the hot oil in the pan is music to my ears.
Stirring the onions constantly is an extremely important step. I remember the first time making this soup, I let the onions sit in the hot pan too long and it changed the whole taste of the soup. This was a mistake I will never make again. The labor and tears of cutting so many onions is deserving of a perfect soup and being lazy makes all that agony worthless!
The aroma of the cooked onions permeates my house, and the scent wraps itself around me - a bit like the blanket. Then we add the beef broth, seasonings, and mix and let simmer until ready to eat. Once ready, I prepare soup dishes with crispy croutons, a ladle of soup, and I top it with cheese. I prefer Swiss, it makes for a nice melty, crispy, cheesy layer. After that, the only thing left to do is broil it in the oven until crispy on top and then enjoy!
